Lena Porter's Persimmon Pie (click here for recipe with metric measurements)  

This persimmon pie recipe is from Miss Lena Porter who worked with the Pikeville Woman's Club in Pikeville, KY for well over 50 years.

Ingredients:

3/4 Cup sugar
2 Tablespoon butter, melted
2 eggs, beaten
1 Tablespoon flour
2 Cups cream
1-1/4 Cups persimmon pulp
1/2 teaspoon cinnamon
1 teaspoon lemon juice

Mix ingredients in the order given and stir until smooth. Pour into an unbaked 8-inch pie shell. Bake at 350F for 15 minutes, reduce heat to 250F, and bake 45 minutes longer or until filling is set.  Recipe from Miss Lena Porter, Pikeville Woman's Club, Pikeville, KY.

Lena Porter's Persimmon Pie (metric measurements)

Ingredients:

150 g sugar
15 g butter, melted
2 eggs, beaten
15 mL flour
475 mL cream
300 mL Cups persimmon pulp
5 mL cinnamon
5 mL lemon juice

Mix ingredients in the order given and stir until smooth. Pour into an unbaked 
23 cm pie shell. Bake at 177 C for 15 minutes, reduce heat to 100C, and bake 45 minutes longer or until filling is set.  Recipe from Miss Lena Porter, Pikeville Woman's Club, Pikeville, KY.
